Green pea cream, cured ham chips recipe

Some history

Cured ham chips are seriously easy to make and are super crunchy! If you don’t have a deep fryer, just do them in the oven! Cut the slices into strips, place them on a sheet of baking paper and leave to cook in the oven for 10min at 200°C. Once done, remove from the oven and leave to cool on a piece of kitchen roll. Then tuck in!

Ingredients

  • 1kg frozen green peas
  • 1l milk
  • 1l cream
  • 20g butter
  • 1 onion
  • 1 garlic clove
  • 8 slices of cured ham

Preparation

Blanch the green peas for one minute.

Sweat the finely chopped onion and the garlic clove (peeled and de-germed) in butter, then add the strained peas.

Moisten with the milk and the cream, then bring to the boil and mix in a blender.

Heat the deep fryer to 140°C.

Place the half slices of cured ham to fry until crispy.
