Green pea cream, cured ham chips recipe

Some history

Cured ham chips are seriously easy to make and are super crunchy! If you don’t have a deep fat fryer, just do them in the oven! Cut the slices into strips, place them on a sheet of baking paper and leave to cook in the oven for 10 minutes at 200°C. Once done, remove from the oven and leave to cool on a piece of kitchen roll. Then tuck in!


  • 1kg of frozen green peas
  • 1l of milk
  • 1l of cream
  • 20g of butter
  • 1 onion
  • 1 clove of garlic
  • 8 slices of cured ham


Blanch the green peas for one minute. Sweat the finely chopped onion and the clove of garlic (peeled and de-germed) in butter, then add the strained peas. Moisten with the milk and the cream, then bring to the boil and mix in a blender. Heat the deep fat fryer to 140°C. Place the half slices of cured ham to fry until crispy.
