Some history

Every year, at the beginning of February, the Romans offered pancakes to celebrate the return of spring. In our time, pancake day is celebrated on 2 February, forty days after Christmas. Candlemas celebrates the beginning of the carnival period. Pancakes are also eaten all over the world: in England, there is Pancake Day, on which the bell is rung in the morning to remind cooks to prepare the pancake batter! In Japan, small pancakes are served with red bean jam. In Poland and Russia, pancakes are called blinis and are served with salmon roe or tarama. In Canada, pancakes are served with maple syrup.

Ingredients

  • ½ cup of wholemeal flour
  • ½ cup of plain flour
  • 25g of butter
  • 3 dessert spoons of brown or white sugar
  • ½ teaspoon of ground pepper
  • ½ cup of water

Preparation

Make the pastry in a small bowl until it has an even consistency, and then spread it out in a buttered frying pan.

Add the sugar and the spices and stir well, adding in some water.

Leave it to cook over a low heat for 10 to 15min, turning it over from time to time.

Don’t make the pastry too thick, to ensure that it gets cooked correctly.
