Some history

Pyrenean Cake: This cake is part of the Pyrenees’ culinary heritage. Perfect when you’re travelling, it keeps very well and is an ideal gift to bring back from holiday. Though traditionally made plain or with blueberries, each family has their own secret recipe – so follow your own and give your creativity full rein.

Ingredients

  • 4 eggs
  • 180g sugar 
  • 250g flour 
  • 10g baking powder
  • 150g melted demi sel (slightly salted) butter
  • 1 vanilla pod
  • 150g red fruits of your choice

Preparation

Generously butter your cake tin, then put in the fridge while you prep your ingredients.
Heat the oven to 170°C (340°F).
Separate the eggs and whisk the whites into stiff peaks. 
Whisk the yolks and sugar until the mixture turns pale. Add the flour and baking powder, and combine. Add the melted butter and the scraped vanilla pod, and whisk until you obtain a smooth batter.
Fold the egg whites (in thirds) into the batter. Pour the batter into the cake tin and bake for 40-50 minutes.
Remove from the oven and leave for 5 minutes before turning out. 


Serving suggestion: you can serve the cake with seasonal fruits and whipped cream.
