Blueberry tart recipe

Ingredients

  • 400g fresh or frozen blueberries
  • 150g caster sugar
  • Breadcrumbs
  • 200g flour
  • 100g butter
  • 1 egg yolk
  • 1 dessert spoon of sugar
  • 1 pinch of salt
  • 5cl water

Preparation

Make the pastry:

Make a hole in the middle of the heap of flour.

Put the salt, the spoonful of sugar,

the egg-yolk and the water in this hole.

Mix together gradually, adding the butter, which you have softened and cut into small pieces, little by little.

Knead for a few moments, then roll the pastry into a ball and leave it in the refrigerator for 15 to 20min. 

Line the bottom of a tart dish with the pastry, prick the bottom and sprinkle with breadcrumbs, so that some of the bilberry juice will be absorbed during cooking.

Cover the pastry with the unwashed fruit, sprinkle the top with caster sugar and cook for 25min in a hot oven.
