Blueberry tart recipe
120 g flour
250 g sugar
60 g potato starch
1 lemon peel or vanilla essence
1- Separate the egg whites and yolks.
2- Whisk the yolks with the caster sugar until they become frothy.
3- Add flour and starch, lemon peel or vanilla essence, and mix smoothly to a paste, avoiding lumps.
4- Beat the egg whites stiff then fold them delicately into the mixture.
5- Bake at 180 °C for 45 min in a cake mould that has been buttered and sprinkled with flour.
