Some history

Morbier owes its name to the village of Morbier, located in the Jura Mountains.

Ingredients for 6 people

  • 3 eggs
  • 2 branches of rosemary
  • 70 g butter
  • 7 cl olive oil
  • 10 cl milk
  • 200 g flour
  • 1 packet of baking powder
  • 2 tbsp mountain honey
  • 110 g Morbier
  • Salt and pepper

Separate the egg whites from the yolks.
Mix the egg yolks with the milk, melted butter and olive oil. Season with salt and pepper. Add the flour and baking powder, then the honey and finely chopped rosemary, and then the Morbier cheese cut into cubes.
Whip the egg whites into stiff peaks and incorporate them delicately into the previous mixture. Pour the preparation into buttered muffin moulds.
