Blueberry waffles with vanilla whipped cream recipe

Some history

A typical dish in Belgium, the Netherlands and northern France, waffles are also a speciality of the Aosta Valley and French-speaking Switzerland. In addition to wheat, which is the most common ingredient, there are also waffles made with corn (as in Burgundy) or potatoes (in the English-speaking countries). 

Ingredients

 

  • 125g flour
  • 125g sugar
  • 10g baking powder
  • 2g salt
  • 2 eggs
  • 175cl milk
  • 40g melted butter
  • 3 egg whites
  • 250cl whipping cream
  • 25g icing sugar
  • 1/4 of a vanilla pod
  • Blueberry jam

Preparation

Make up the waffle mix:

Place the flour, sugar, baking powder and salt in a mixing bowl.

Make a well.

Add the eggs and milk, then beat with a whisk (without lumps).

Add the melted butter then slowly add the stiffly beaten egg whites.

 

Make the whipped cream:

Put the cream, icing sugar and seeded vanilla into a mixing bowl, then beat to the desired consistency, like a chantilly. 

Cook the waffles and serve with blueberry jam, for a snack by the fireplace.
